Fall means apples. I buy a bunch when they are on sale and start cooking. Apple crisp, apple pie, apple butter, apple sauce, apple muffins and plain old apples and peanut butter 🙂
My kids love having mini muffins around. They fit perfectly in their lunch boxes and I’m delighted to give them a few muffins rather than lose a whole big one on a couple of nibble. Plus, they’re an easy snack for me when I need a quick snack. So, I try to just keep different mini muffins around. If you can’t go through them fast enough, throw them in the freezer and they are perfect in about 20 seconds in the microwave. But ours don’t usually last that long!
Apple Applesauce Muffins
Makes about 35 mini muffins
1/2 cup unsalted butter, softened
1/2 cup sugar
3/4 cups applesauce
1 3/4 cup all purpose flour
1 Tablespoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 large apple, chopped into very small pieces
Preheat oven to 350. Spray mini muffin pan or fill with paper liners.
Cream butter and sugar. Add eggs one at a time. Stir in applesauce.
Mix together dry ingredients. Add to creamed mixture. Stir in diced apples.
Fill muffin cups. Bake 12-15 minutes until top springs back when pressed and they start to brown around the edges.
The muffins are delicious by themselves, but if you want a delicious treat, melt 1/4 cup butter in one bowl. Stir 1/4 cup sugar with 2 teaspoons cinnamon in another bowl. When muffins are cool to the touch, dip the top or the entire muffin in the butter to coat, then in the sugar. Rest on a cooling rack to let them cool and dry.
